Pineapple & Gammon Steak
Chargrilled gammon steak, Chips and fried eggs, Mustard Watercress
- 4 gammon steaks
- 8 eggs
- 4 portions of chips
- 1 bag of watercress
- Mustard vinaigrette
Char grill or griddle 4 gammon steaks.
Fry 8 eggs off over a low heat with a knob of butter until the egg whites are firm and the egg yolks are still runny.
Arrange a gammon steak on each plate and top with 2 eggs each.
Place the chips on each plate and garnish with the dressed watercress.
Reasons for Pairing:
- Pineapple and gammon are traditional bed fellows, with the two being a staple of 70s cooking as well of being paired together on Hawaiian pizzas.
- The sweetness of the pineapple helps cut the saltiness of the gammon steak, similar to adding lemon juice if a dish is too salty or like in a tequila slammer.
- Pork is a fatty meat so the acid in pineapple helps the stomach digest the meat more easily, just like the pairing of apple juice with pork or mint sauce with lamb.
